A few weeks ago, my dad had a bizarre request: he asked me to make a lasagna dish I’ve made in the past, along with some pumpkin pie. It’s May. Making lasagna is no big deal, but a pumpkin pie? We just got rid of the winter, I’m not ready to conjure up all those “warm fuzzy holiday” feelings quite yet.. but I’ll do it, just for dad. Besides, making a pumpkin pie is probably easier than making a lasagna, and finding the proper ingredients this time of year is no problem, thanks to canned pumpkin by Libby’s.
So, I headed to my local supermarket and picked up four items on my list: a disposable metal baking dish (I don’t want to be bothered with cleanup) a pre-made pie shell, a can of Libby’s pumpkin, and a can of Nestle Carnation Evaporated Milk. I try to make foods as fresh as possible, but when it comes to baking, cans are a time saver. Who wants to sit and steam, peel, and mash a pumpkin to make a pumpkin pie, and seriously- WHERE are you going to find pumpkin this time of year? Did you know you can’t use just any pumpkin to make a pumpkin pie? Libby’s canned fruit takes out the guess work of pumpkin filling and uses only all natural pumpkin and nothing else! FYI- pumpkin is very high in Vitamin A, so eat up! It’s healthy!

- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 can (15 oz.) LIBBY’S® 100% Pure Pumpkin
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 1 unbaked 9-inch (4-cup volume) deep-dish pie shell
- Whipped cream (optional)
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
POUR into pie shell.
BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.
It was gone within HOURS!
