My hubby and I, along with my cousin, decided to join a vegetable coop this season. We’ve been talking about it for two years, but we always seem to miss the deadline. This year we were proactive and made it! So, each week we have a box of fresh, organic veggies to base our meals on. We knew that this would help us change our diet and live healthier lives, especially after my pregnancy which made me have insane cravings of salt and fat. I managed to lose a good amount of pregnancy weight, but my hubby is left with the aftermath and didn’t get to drop an instant 20 lbs like I did!
We get a lot of ordinary vegetables, such as carrots, lettuce, and kale, and then we get no-so-ordinary ones like kohlrabi. It is interesting to come up with fun recipes for these veggies and it gets us to try new things. The past few weeks, we received two different types of lettuce, Boston Lettuce and Romaine lettuce. I know what you are thinking- these are VERY typical salad ingredients… but what if I told you I didn’t use them in a salad? I used the buttery Boston lettuce as a wrap for chicken stir fry. I’ve been having an intense craving for P.F. Changs Soothing Chicken Lettuce Wraps, but there is NO WAY I was travelling with a newborn and a toddler to satiate this craving. So I looked up some recipes and found one with a high rating at food.com. I had everything except the Rice Vinegar and the water chestnuts, plus I opted out of the mushrooms. The water chestnuts were easy to fine at my local supermarket. I had a bottle of Nakano Rice Vinegar for a current campaign.
I decided that for this recipe, the original Rice Vinegar was most appropriate. I use the Nakano Garlic Rice Vinegar as a seasoning for salad. It was a hit this past weekend in a macaroni salad I made. The tangy vinegar infused with garlic along with some pure olive oil created the perfect dressing with an amazing taste. No heavy dressings necessary. That is the best thing about Nakano Rice Vinegar: it adds a flavorful tang to any recipe without adding calories! Now, for the awesome Chicken Lettuce Wrap Recipe from Food.com:
Ingredients
- 3 tablespoons oil
- 2 boneless skinless chicken breasts
- 1 cup water chestnut
- 2/3 cup mushroom
- 3 tablespoons chopped onions
- 1 teaspoon minced garlic
- 4 -5 leaves iceberg lettuce
Special Sauce
- 1/4 cup sugar
- 1/2 cup water
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons ketchup
- 1 tablespoon lemon juice
- 1/8 teaspoon sesame oil
- 1 tablespoon hot mustard
- 2 teaspoons water
- 1 -2 teaspoon garlic and red chile paste
Stir Fry Sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon rice wine vinegar
Directions:

Make the special sauce by dissolving the sugar in water in a small bowl.

Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil.

Mix well and refrigerate this sauce until you’re ready to serve

Combine the hot water with the hot mustard and set this aside as well.

Eventually add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps.

Bring oil to high heat in a wok or large frying pan.

Saute chicken breasts for 4 to 5 minutes per side or done.

Remove chicken from the pan and cool

Keep oil in the pan, keep hot.

As chicken cools mince water chestnuts and mushrooms to about the size of small peas.

Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.

When chicken is cool, mince it as the mushrooms and water chestnuts are.

With the pan still on high heat, add another Tbsp of vegetable oil.

Add chicken, garlic, onions, water chestnuts and mushrooms to the pan.

Add the stir fry sauce to the pan and saute the mixture for a couple minutes then serve it in the lettuce”cups”.

Top with”Special Sauce”.
