I’m always looking for clever ways to keep my family interested in dinner. Kids tend to appreciate foods they are familiar with, but they also get bored of the same flavors over and over. Instead of completely changing “boring” dinners, I try to change up my recipes in a kid-friendly way. On our super busy days, I thaw out a package of thin chicken cutlets and I let them marinate in the fridge with some olive oil, salt, pepper, garlic, oregano, paprika, and garlic powder, and then I add condiments to the dinner table so each child can personalize their meal with the flavors they love. Some nights they reach for the teriyaki, and some nights ranch. Dressing up their meal any way they want is something they enjoy doing.
This summer in Greece my kids were fascinated by all the basil that grew everywhere we visited. They loved the smell and the taste and even asked if we can grow basil at home to add to recipes. They also know their mom has a brown thumb and can’t keep a plant alive to save her life. So, instead of promising them basil bushes in our yard, I told them all the things we can make with basil, pesto being one of them. I explained how pesto is used, and instead of the traditional way of putting pesto on our pasta, we decided to try Barilla Creamy Genovese Pesto on our grilled chicken.
One of the things that impressed me was the ingredient list in Barilla Creamy Genovese Pesto. I love that they use cashews as a thickener, which makes it so much better than using chemical fillers. The ingredients include things I would feel comfortable feeding my family. We tried it out on one of our quick grilled chicken nights, and while the kids didn’t care too much for the flavor as a dipping sauce for their chicken, my husband loved it. You can’t win them all, but everyone got to try something new!
