Now that school is out I’m looking for activities to keep my girls busy. They love getting in the kitchen and getting their hands dirty, so I knew making cupcakes would be a great rainy day activity for us. My younger daughter loves anything chocolate, and the more chocolate the better. So these triple chocolate cupcakes with M&Ms are just what her tastebuds love! Check out the recipe below.
Ingredients
1 box chocolate cake mix
1 1/4 C whole milk
1/2 C sweet cream butter softened
3 large eggs
1 bag of mini M&M, 1/2 cup of M&Ms for cake mix
Directions
Preheat oven to 350 and place cupcake liners into cupcake pan.
Combine all ingredients, including half cup of M&Ms into a medium bowl and mix until combined and thick.
Scoop 3/4 into the liners and bake for 21 minutes.
Frosting Ingredients:
1/2 C cocoa powder
3 C powdered sugar
1/2 sweet cream butter (soft)
2 TBSP heavy cream
Frosting Directions:
-In stand mixer, mix the 1/2 C sweet cream with the powdered sugar.
-Mix until sweet cream and powdered sugar look with small pebbles.
-Add heavy cream.
-Mix in the heavy cream until thoroughly blended.
-Test to see if the prepared frosting can stand while forming stiff peaks.
-If not mix in 1/2 C powdered sugar.
-Test again for stiff peaks.
-If not add 1/2 C powdered sugar.
-Mix well.
-Fill a pastry bag with large tip of your choice with frosting.
-Frost cupcakes and decorate with M&M’s.
