My New Year’s resolution this year is to eat more veggies! I love vegetables, but I often forget about them and have to think of ways to include them in my meals. Lucky for me, I don’t have to hide veggies in my toddler’s food because she loves them, but I do try to include vegetable in dishes that normally wouldn’t have them. For example, I put veggies in my mac and cheese. My toddler loved broccoli mixed in until recently, so now I just finely grind up carrots and sneak them in the cheese. She doesn’t even know it’s there!

We have finger veggies and the kids love to eat these and make games out of it.

While we do eat can or frozen veggies with every meal, i also put carrot sticks and celery sticks on the table.

We are pretty lucky, our kids love their veggies and fruits right now…. they get both with lunch and dinner.
add a vegetable to each lunch and dinner meal, it can be a green bean casserole, or carrot sticks as a snack or side for lunches
I cook with veggies each day and I also make sure to include them in every meal. between finger foods or actually cooking them in my meal, my kids know it’s an important part of the meal.
I try to make sure that we get at least 2 different vegetables with dinner.
