A few weeks ago I went to a lovely dinner with a group of moms in my area. It was called a “Heritage Pot Luck Dinner” and everyone was asked to bring a dish from their country or background that they would like everyone to try. As an Italian I brought an Antipasto and a bottle of Montepulciano. My relatives in Italy actually make their own wine from the Montepulciano grapes in their region…so I thought it was fitting.
A friend of mine, who also comes from an Italian background, made the most delicious (and simple) pasta dish with deliciously fresh ingredients. It was an angel hair pasta drizzled with olive oil and served with fresh mozzarella, chopped basil, and diced tomatoes. I had to make this at home for my family!
On Sunday the kids are home all day and my husband is at work, so I wanted to make something quick and easy. I decided to try this new recipe out on my family. While the water was boiling for the pasta I diced the tomatoes, chopped the basil, and cubed the fresh mozzarella. Five minutes later the angel hair was cooked, and I tossed all the ingredients together. So simple. Our olive oil is from my sister-in-law’s family near Rome which makes this dish is especially delicious!
When I served the kids my 3 year-old didn’t want any of the white stuff, the red stuff, or the green stuff….so he just had the pasta. My 4 year-old was a little hesitant, but my husband decided to twirl the pasta around the mozzarella so it was hidden. My son knew it was there but he played along. By the end of the meal the bowl was empty and everyone was asking for more! Now I know to make more than ½ lb of pasta next time!
Ingredients
1lb of angel hair or your favorite pasta
1 package tomatoes, I used tomatoes on the vine
1 fresh salted mozzarella, tastes best freshly made from a deli rather than the packaged variety
1 bunch basil
olive oil
salt and pepper
Boil water in a large saucepan. Cook pasta according to the direction. Dice tomatoes, mozzarella and basil to desired size. Once pasta is cooked, drain and toss with olive oil, tomatoes, mozzarella, basil, salt and pepper. Serve!
