Some nights dinner comes together easily while others take more planning. I use to try to meal plan around the deals in the weekly supermarket circulars, but I still forget an ingredient here and there. I hate to admit it, but many nights I throw in the towel and end up ordering dinner, or I make a simple pita-pizza for the kids because it’s easy. Meal planning with simplifies dinner by allowing you to choose your meals for the week and sending you all the ingredients plus a recipe for dinner that night. What more can you ask for?
I find that I will cook more often and be a little more creative with dinner when I have the proper ingredients at my disposal, and Blue Apron does just that for me. It was easy to sign up- I received and got to choose which meals would work best for our picky tastebuds.
The two recipes I chose were Chicken Meatloaf and Beef Tacos with Roasted Green Beans. I knew these were two interesting recipes because we are a taco-loving family, but meatloaf is a sore subject around here. I have despised meatloaf from the time I was a kid, but maybe this lighter version with chicken might appeal more to my tastebuds.
Step by step I prepared our side dishes and the main course. Within 45 minutes dinner was ready and plated. The Beef Tacos were a hit, and the Roasted Green Beans were a great addition to our meal. This is something I would definitely make again. The cucumber-avocado salsa with radishes was a new take on guacamole for us, and a refreshing/crunchy way to accompany our meat.
The Chicken Meatloaf was prepared the next day. It was accompanied by homemade mashed potatoes, which I make often for my husband and I. My recipe differed slightly and my husband actually preferred my garlic mashed potatoes over the Blue Apron version, but that’s something you can fix based on your preferences. As for the Chicken Meatloaf, my husband loved the Blue Apron recipe and while for me it was edible, I’m still not a fan of meatloaf. The carrot fries on the side were delicious and something all my kids truly enjoyed.
Would I order from again? Absolutely. I love that you can choose your recipes for the week and even choose the day of the week you would like to receive your box. This is especially helpful during the school year when we have a few late nights where it is more difficult to get dinner together, or if I don’t have time to make it to the supermarket. Blue Apron is a time and money saver, including only the ingredients you need for dinner without any waste or impulse buys at the supermarket.
