Some days are super busy and a crockpot is mama’s best friend! I don’t like a lot of crockpot recipes so I stick to the handful that I know will turn out great. I like to make hearty chili bowls – even though today is suppose to be a nice spring day – it doesn’t really go with the weather!
Crockpot Chili Bowls
1 medium onion
1 pound ground beef
1 can black beans rinsed
1 small can diced tomatoes (I use fresh grape tomatoes)
1 clove garlic – chopped
1 tbsp chili powder
salt
pepper
sour cream
shredded cheddar (or Mexican blend cheese)
Cooked Rice
Place all ingredients except for sour cream, cheddar and rice in the crockpot. Cook on low for 5-6 hours, mixing meat at least twice.
Once the meat is done, start making your bowls by placing a scoop of rice, a scoop of chili, a spoonful of sour cream and top it off with cheese. Pop in the oven for 5 minutes so that the cheese can melt and serve! Great for a rainy day!!
I am always looking out for good crockpot recipes. I will have to save this and give it a try. I understand what you mean about the crock becoming your best friend at times. Thanks for sharing!
