Holiday cookie exchanges, teacher gifts, gifts for friends and family….the list goes on. Now, I’m not a baker but I always have a little baking to do around the holidays. And as a self-proclaimed non-baker I can say that Italian Wine Cookies are probably the easiest cookie you can make. And quick too!
I first had these tasty treats when visiting my now husband in Italy before we were married. He was still living there with his family, and my mother-in-law’s neighbor baked a huge batch of these for me to take home to my family. Not only were they simple and delicious, they stay fresh for about two weeks….so they are long-lasting as well!
My mother loved them so she asked for the recipe. My husband said its just wine, olive oil, sugar and flour. I didn’t believe him, but sure enough…..he was right. Turns out it is equal parts wine (red or white), olive oil, and sugar, plus a pinch of salt. Then you simply add flour until it becomes a dough. You then make little rings and bake for about 20 minutes. I added a little egg wash and a sprinkle of sugar on top of each cookie, and there you have it. I have little holiday bags set up of about 2 dozen in each for teachers, my contractors, the guy at the desk where the kids take swimming lessons, and the lady who opens the door for us at school. Oh, and of course a batch for us.
Italian Wine Cookies
1/2 cup sugar
1/2 cup white wine
1/2 cup olive oil
1/2 tsp. Salt
flour
egg white from one egg
Mix sugar, wine, olive oil and salt together in a large mixing bow.
Start adding flour and continue until the mixture becomes a dough.
Then shape dough into small rings.
Brush rings with egg wash and sprinkle with sugar.
Bake at 325 for 20 minutes or until cookies start to brown.

I don’t have an exact measurement for the flour. You just add flour and stir until it becomes a dough. Next time I make them I’ll keep track of how much flour I add….
