Oh no. It’s almost 8:30am and I completely forgot to take something out of the freezer to defrost for dinner. Well, I’m heading to the market anyway so I can pick something up. But what to make?
When I was in Italy for 3 weeks this past summer with my husband’s family, my mother-in-law made a delicious chicken dish with red peppers. She almost never makes chicken because my father-in-law refuses to eat any kind of poultry, but my brother-in-law was joining us for dinner and I was told that this was one of his favorite meals. Oh, and “pepper” in Italian is “pepperoni” so I thought we were having some kind of bizarre chicken with pepperoni dish. To my surprise, it was late afternoon and I saw that there was a large shallow saucepan filled with chicken legs and thighs and red peppers. The meal we had later that evening was delicious. Something I should definitely make at home.
I didn’t exactly get a recipe but I tried to replicate what we had that night in my own kitchen. I bought some chicken thighs (free-range and antibiotic free), some red and yellow peppers, and onions. I pulled out a large, shallow saucepan, added some olive oil, and turned the flame on. And then I just threw in my peppers, onions, and chicken thighs. Seasoned with salt and pepper and cooked on medium heat, covered, for about a half hour. And done. Delicious!
This is a super easy, super quick go-to meal in our home. Sometimes I make an additional vegetable to serve with it. It also pairs well with a starch such as rice or potatoes, but we try to stick with protein and veggies for dinner in our home.
Chicken with Peppers
8 boneless, skinless chicken thighs (or substitute whatever pieces of chicken you like)
2 red or yellow peppers
1 onion
3-4 tablespoons olive oil
salt and pepper to taste
Cut peppers and onion into strips or bite size pieces.
Heat olive oil in large shallow saucepan over medium heat.
Add peppers, onions, and chicken pieces to saucepan.
Salt and pepper chicken.
Cover and cook over medium heat for about ½ hour.
Serve as is or over rice, potatoes, or with additional vegetable.
