Summertime means lots of family and friend gatherings. I look forward to the great food – BBQs, frozen drinks, and new dip concoctions. No matter what the theme of the party is, Tostitos Scoops are always there to celebrate with us! A few years ago I stumbled on an awesome recipe for black bean mango salsa and since then, I’ve been making it all the time and change it up as I go along.
I love Frito Lay Tostitos Scoops because they can hold the perfect mouthful of dip or salsa. Other tortillas just don’t stand up to the weight of the salsa. Oh, and speaking of salsa, I love to use all fresh colorful ingredients that everyone will love, including the kids. My girls love to snack on some homemade hummus, which is so easy to make. They love the creaminess of the chock-full-of-healthiness bean dip and the crunch of the Tostito scoop.
Check out my healthy recipe for Hummus:
1 can chick peas
2 cloves Garlic
3 tbsp Olive Oil
1 tbsp Tahini Paste (I usually leave this out because I personally don’t like Tahini)
Juice of 1 Lemon
Place all ingredients in a food processor and blend until creamy. Add Olive Oil if you like it creamier, less Olive Oil if you want it thicker.
For my deliciously fun black bean mango dip, check out this recipe:
1 can black beans
2 mangos chopped
2 tbsp fresh cilantro chopped
1/2 red onion chopped
juice of two limes
Place all ingredients in a bowl and mix! How easy is that?
