Guacamole has become the #1 dip at all our family functions. It’s no wonder that it is everyone’s favorite. This healthy dip made from Mexican avocados, the most popular Haas variety, is available year round. I have tried many recipes when it came to the perfect Guacamole, and now that I finally perfected it, I wouldn’t change a thing. So, this year, instead of creating a different recipe for our upcoming Halloween party, I decided that my Spookamole would be all about the presentation. You see, last year my hubby realized that he was pretty good at carving pumpkins – and I was really good at making them gruesome. While I don’t have a pumpkin yet this year to show you my presentation, check out last year’s photo. Instead of pumpkin insides being spewed from the pumpkin’s mouth, this year we will feature our first ever Spookamole coming out of the pumpkin into a platter. Kinda neat, don’t you think?
My simple guacamole recipe is:
5 Avocados from Mexico
1/2 – 1 whole jalepeno pepper (depends on how spicy you want it)
1/2 onion
1-2 cloves garlic
juice of 1/2 lime
salt
Mix all ingredients together. Set up carved pumpkin in a location where it will not be moved. Place a shallow platter in front of the carved pumpkin and scoop guacamole onto the platter, making sure to place some inside of the pumpkin’s mouth to make it look like it is coming out of the pumpkin.
I know this may not seem like the traditional recipe, but I am not a big fan of tomatoes and how they alter the taste of the avocado. I love the natural goodness the avocado has to offer! If you want to make it more festive for Halloween, you can dice up some carrots to add orange in the mix.
