Swimsuit season is just around the corner and I am definitely NOT ready. Ok, sure, I JUST had a baby a month ago so I am cutting myself some slack. In truth I really would like to lead an overall healthier lifestyle because my hubby and I have gotten into a rut of eating foods that are not so good for us. I notice a difference in my energy levels and really need to make a change in the way we eat. My problem? I love fatty foods- hamburgers, french fries, milkshakes, pizza. My hubby, on the other hand, loves his sugar. He can eat anything covered in sugar and adds about 4 or 5 large teaspoons of sugar to his coffee every morning. With artificial sugars getting a bad rep lately, he only sticks with white sugar.
We hadn’t tried Stevia because it seemed so new that we were a little wary of it. Turns out Stevia is an all natural sweet extract from the stevia plant – there are no artificial ingredients, flavors, chemicals, or preservatives! So, why should you use it instead of sugar? Well, it has HALF the calories of sugar and can take the place of sugar for sweetness. When it comes to baking- I don’t mess around with ingredients, Believe it or not, baking is a science and if ingredients are substituted or left out, your sweet treat can turn out to be a disaster.
Domino, the leading name in sugar, has come up with a perfect blend of pure cane sugar mixed with Stevia to create the perfect sweetener with all the taste and half the calories of sugar alone. One serving of sugar (1 tsp) can be substituted with 1/2 teaspoon of Domino Light and has only 5 calories! When it comes to baking, all you need is HALF the amount of Domino Light in place of your normal sugar measurement and you have a perfectly balanced sweetness. So if your recipe calls for 1 cup of sugar, you would use 1/2 cup of Domino Light in it’s place.
I tried this myself in my own baking. I was reluctant to mess with ingredients because I know baking is very easy to mess up. I followed the recipe for Rhubarb cake exactly as I normally would, but instead of the regular amount of sugar, I used half the amount with Domino Light. Check out my perfect Rhubarb cake below.
