I love spending time with my little girl baking cookies and sweet treats. Before I was a mommy, I spent many hours in the kitchen coming up with delightful concoctions of indulgent goodies, and my hubby, aka my taste tester, never complained!
I love the versatility of a simple pound cake. You can decorate it, color it, flavor it, you name it! I have a basic recipe from The Road to Blue Ribbon Baking by Marjorie Johnson that I love to use, and I change it up as necessary. With the holiday season upon us, I thought it would be fun to make either a Pumpkin Spice Pound Cake or a Peppermint Mocha Pound Cake. I know what you are thinking: what kind of extracts would you use to get that kind of flavor combo? Well, I have a secret ingredient in my back pocket, or rather, in my fridge at all times: International Delight Creamers! Unfortunately my local grocery story doesn’t stock too many flavors and I stuck to my old favorite, ID Hazelnut Creamer.
I just want to warn you that you cannot simply ADD International Delight Creamers to any recipe, but rather REPLACE a liquid ingredient with International Delight. In this recipe, which calls for 1 1/2 cups of butter I took out 1/4 cup of butter and replaced it with 1/4 cup of International Delight Hazelnut Creamer. Check out Marjorie Johnson’s slightly altered recipe below:
[Hazelnut] Pound Cake
1 1/4 cups butter (room temperature)
1 pound sifted powdered sugar
6 large eggs
1 teaspoon vanilla extract
1/4 cup International Delight Hazelnut Creamer
2 3/4 cups sifted cake flour
Butter and Flour a Bundt pan and set aside. Preheat oven to 300 degrees. In a large electric mixing bowl beat butter until creamy. Gradually beat in sugar. Beat in one egg at a time, beating well after each. Add vanilla. Add International Delight Creamer. Gradually stir in flour.
Bake in oven for 60-75 minutes, or until toothpick inserted comes out clean. Cool for 5 minutes and turn upside down.
You can also add your favorite ID creamer to any brownie mix! Simply swap out 1/4 cup of water for 1/4 cup of creamer. It gives your brownies a little hint of something special that will make anyone eating it say MMMMM! If you really want to add a holiday zing to your brownies, you can try ID’s Peppermint Mocha which adds a little hint of candy cane to your recipe!
