When I got married and moved out of my parents house, I made the decision to leave my precious kitty, Phoebe with them. She was adopted when she was just a kitten and was already 7 years old, so I didn’t want to take her to a new home, away from the rest of the family she grew up with. She would also have been alone most of the day since my hubby and I were working.

Fast forward another 7 years later and Phoebe is still the same persnickety cat she’s always been. Picky and a bit entitled, she will only eat certain foods. This can get quite frustrating for my mom when she purchased food, because Phoebe isn’t always consistent in her tastes. Some days she will eat the food she’s been eating and other days she will walk away from it.
Her eating issues may have been from the days I was caring for her. I didn’t like giving her that mushy pate in a can, and often got her the packaged wet food that had some characteristic of real food. It was no surprise to me when she lapped up Nutish for Cats from Rachael Ray! Her favorite was the chicken purrcata which smelled similar to chicken soup, and had real shreds of chicken in it. wouldn’t feed my family just any meat. Check out my recipe for my husband’s favorite Chicken with Bacon hero that I make on the weekends below. Every weekend I fry up come real chicken cutlets in Panko breading along with salt, pepper, and garlic. The kids love the crispy chicken with a side of broccoli while my husband and I make yummy heros.
It’s simple, here’s what you need:

Crispy Chicken Bacon Hero

Ingredients:
4 thin chicken breasts
Sliced Mozerella
Hero or ciabatta bread
1 package bacon
2 cups of panko breading
1 egg
sliced tomato
salt, pepper, and garlic powder to taste
mayonnaise
Directions:
Cook the bacon and set aside. Soak chicken breasts in 1 egg and roll the chicken around in the Panko breadcrumbs with seasonings until the entire chicken breast is coated. Fry until golden and crispy. Slice hero bread in half and spread mayo on one side. Add chicken, sliced mozzarella, sliced tomato and bacon. Close sandwich and place in a 400 degree oven for 8 minutes. Enjoy!
