Our school supplies have been purchased and our backpacks are packed. Our sports and after-school activity checks have been sent and we are counting down the days until school starts. It always takes a few weeks to get into our groove but we find our footing eventually. Home cooked meals are virtually nonexistent during those weeks and consist of quick and easy freezer items like pizza and nuggets, a quick pot of pasta and salads. This gets boring real quick so I’ve started thinking of things I can make ahead and freeze just to break up the monotony.
We try to limit our take-out food to once or twice a week, but I know those first few back to school weeks it will be quite hectic and I will gladly take all the meal-help I can get. When we ordered Boston Market a few days ago I noticed that when I placed my order for a family meal I was able to get an additional whole rotisserie chicken for$1.99. So, we got 2 rotisserie chickens and 4 sides for less than $30 and we can feed our family for a few days. It’s so easy to order too, our location takes online orders so I added all my requests and within 20 minutes my meal was ready to go. No waiting in line! We could have added the $1.99 Rotisserie chicken to any family meal, whether it was the Roasted Turkey, BBQ Ribs or home style Meatloaf- but my family is big on chicken and I love the versatility of the meals we can create with the leftovers.
Our dinner the first night was delicious, but knowing we had a few meals for the next few days was such a time-saver. I sliced the extra chicken before putting it away and the next day I pulled it out for a quick lunch and even made a chicken salad sandwich for my hubby to take to work with him.
