My little girl LOVES pizza and can eat it for breakfast, lunch, and dinner every day. Pizza is one of our “safe foods” that we know she will always eat. This past week has been miserable and rainy in NYC, and with a pinched nerve in my back, it was not easy to get around to take her out for pizza. Since we were away last weekend, she didn’t get her pizza fix and seemed to crave it this week.
I love making homemade foods because I like to control what goes into my little girl’s belly. I am big on whole grains and organic ingredients, but we all know when it comes to pizza, NOTHING beats NYC style pizza from the pizzeria. For this reason, I invested in a pizza stone that promised to give me pizzeria style crust in the comfort of my home. Growing up, pita pizza was my after school meal of choice. We ALWAYS had Pita bread lying around – I’m Greek – did you expect anything less? So it was a no brainer that I would choose to make pita pizza for my little girl too!
I usually make my own crust with my handy KitchenAid, but this week, it was not happening. So, I scoured my kitchen to find some ingredients to put together a delicious pizza for my toddler. With whole grain pita bread, Whole milk mozzarella, and organic garlic basil tomato sauce, I went to work. I like to use Whole Milk mozzarella because it melts more evenly. So I preheated my oven WITH the pizza stone already in and I assembled my mini pizzas. I love that these fun little pizzas are totally customizeable and everyone can have any topping they want!
We make Pita Pizza’s all the time! I always buy tons of ingredients, make a pizza bar, and it makes all seven of us happy to have the pizza made our way! My favorite is ranch instead of pizza sauce with chicken, bacon, artichoke, feta and parmasean cheeses. So yummy!
