I’m always looking for really easy meals that are healthy and packed with nutrients. So, when I walked into Trader Joe’s the other day I was browsing the veggie section…. but not exactly sure of what I wanted to make for dinner. I noticed that with their packaged salad/greens they had a mix of greens complete with some recipes on he back. The first recipe called for an onion, sausage, chicken stock and this bag of greens containing mustard, turnip, collards and spinach. Perfect.
The recipe suggested a cooked sausage but I bought Italian sweet sausage that needed to be cooked. I already had chicken broth and onions at home, in addition to the salt and pepper. At home I chopped the onion, added it to the olive oil already in the saucepan, and then thought that the can of cannelloni beans in my pantry might go well with this dish. In they went, with the sausage, greens, and chicken broth. About 35 minutes later…..dinner was served!
Now, I didn’t expect my 3 year-old to even touch this dinner so I was prepared with yogurt, watermelon, and Cheerios. But my 4 year-old ate the sausage and believe it or not, my 13 month old at the sausage AND the greens! I thought it was delicious. Thank you Trader Joe’s!
Sausage with Beans and Greens
1 package southern greens from Trader Joe’s
1 package sweet Italian sausage or any sausage
1 can cannelloni beans
2 cups chicken broth
1 onion
salt and pepper to taste
olive oil
Heat some olive oil over medium heat in large shallow saucepan.
Add diced onion and sausage.
Cook for a few minutes.
Add 1 can cannelloni beans, chicken broth, and greens, salt and pepper.
Cover and simmer over low for about 35 minutes.
