Monday’s I usually have people over – I know – not the typical “get together” day. I cook more on Monday’s since we have more people eating. Today’s recipe is for a very basic, easy to make lasagna.
Here’s what I used:
1 pound chopped meat
28 oz can of crushed tomatoes
12 oz tomato puree
1 small onion – diced
1 bay leaf
1/2 tsp garlic powder
1/2 tsp thyme
1/2 tsp salt
1/2 tsp oregano
1/4 tsp red pepper flakes
1 bay leaf
(1 tbsp sugar optional – it cuts the acidity of the tomatoes, but my hubby doesn’t like it so I leave it out)
1/2 box of oven ready Barilla Lasagna noodles. I use a 9 x 13 lasagna dish, so about 10 noodles is all I need.
2 eggs
16 oz ricotta
16 oz shredded mozzarella
Brown the chopped meat and onions in a saucepan. Add tomatoes and all the spices. Cover and cook for about 1/2 hour.
Place 5 overlapping noodles on the bottom of the lasagna dish. Spread 1/2 the ricotta mixture, followed by 1/2 the cheese and then half the meat sauce. Layer again with the rest of the noodles, the rest of the ricotta the rest of the mozzarella and the rest of the meat sauce.
Place in 375 preheated oven for 1/2 hour, let stand for 10 minutes.
I usually place a cookie sheet on the rack below the lasagna pan in the over in case it drips.

this lasagne looks really easy to make and i havent tried the oven ready noodle yet but you make them seem easy to use and do they really cook up well. i wish you would let us know the nutritional value of your recipes since i am counting calories and need them. thanks!

lasagna is one of my favorites and not sure why I don’t make it more often. I end up buying a frozen one but there’s really nothing like homemade and this looks so good.

Oh this looks so good! My mom used to make a home made lasagna when I was growing up and I just loved it. Lasanga is my favorite! I do make it often here, but a easy one with spaghetti sauce! This recipe looks really good and I am going to have to try it!
