Here is a quick, easy, and HEALTHY recipe for you!
Spinach and Feta Stuffed Chicken:
4 Boneless Chicken Breasts
10oz Frozen Chopped Spinach
1 small onion, diced
1/2 pound feta cheese
1/4 tsp garlic powder
salt and pepper
Thaw frozen spinach completely, wrap in a towel and squeeze out moisture. Place in a mixing bowl with crumbled feta, garlic, salt and pepper. Add about 1/2 tbsp oil. Mix well.
Slice chicken breasts paying attention to your fingers.. Don’t cut too deep because you will ruin the chicken (and bleed all over it – yuck)
Slice about 3/4 of the way – lengthwise, on the side of the breast, creating a pocket.
Score the spinach mixture so that you have 4 equal parts, and stuff the breasts. I like to create a small hole in the breasts and open the rest with my fingers, so that the mixture doesn’t leak out.
Place in an oven safe baking dish with 1/4 inch water on the bottom. Place breasts in the water, sprinkle with olive oil, salt, pepper, garlic powder and some paprika for color. Bake until chicken is thoroughly cooked, and cover with aluminum about 20 minutes through cooking, to lock moisture in.
