Ever since hubby and I have started dieting, I have only been cooking for my little girl, since our diet consists of pre-made meals. My daughter still gets a home cooked meal – but her meals are much more simpler. Here is a kid friendly meal!
Pork Strips with Sweet Potato Fries
Boneless Pork Loin cut into 3 inch strips (about 1 inch thick)
1 egg beaten with 1 tsp water
1/2 cup panko crumbs
1/4 tsp garlic powder
1/4 tsp paprika
sprinkle salt and pepper
Fries
3 sweet potatoes cut into fry style strips
Olive Oil
Salt
Pepper
Combine bread crumbs and spices in a shallow dish. Roll pork strips in egg and then cover with bread crumb mixture. Place on parchment paper in 375 degree preheated oven for 20-30 minutes.
On another pan, spray with olive oil and place fries on. Coat with olive oil and salt/pepper. Mix them to make sure they are completely coated. Place in a 450 degree oven for 25 minutes.
My little girl loves this yummy dish that she can easily eat on her own! She does not like to be fed, but also does not believe in using utensils – Be careful, oil stains!
