Raise your hand if you cook a homemade gourmet meal every night. . . yeah, I didn’t think so! I’ll be honest, on the days I’m not excessively tired or being lazy, the only reason a “real” meal can’t come together is that I simply don’t have all the ingredients I need. If someone were to drop off groceries with every detail to make a delicious dinner, I wouldn’t resort to our typical grilled chicken with a side of veggies, or our thrown-together hamburger meals. I’m busy, and I know you get it because if you’re a parent of school aged children then YOU’RE busy too. When I’m not doing the pickup and drop off routine, I’m planning for our next girl scout meeting, attending a PTA board meeting, taking my little guy to his appointments, and trying to get something decent on the table while helping my 2nd grader with common core math homework from hell. Then it’s time to take them to their afterschool activities.
I’m bored. My husband is bored. My kids are bored. You can say that as a family, we are BORED of our meals. In my defense, my kids stick to a handful of things they love and that usually comes in the form of tacos. Chicken, beef, veggie – you name it, if it’s covered in cheese and guacamole and tossed in a tortilla, they eat it. This week, however, has been a little different. We nixed our Taco Tuesday for a delicious pasta primavera. On Wednesday we had an interesting take on grilled chicken, and on Thursday we attempted to BBQ but apparently, we’ve entered our rainy season in NYC, so the only grill I was able to fire up was over the stove top in the form of a cast iron grill. The meats were left out of the individual bags, most likely to prevent cross-contamination in the event of leakage.

Each meal took about 15 minutes to throw together. All the chopping and dicing was done for me, so all I really needed to do was cook it all!
