

I love the versatility of salads. They can be a side dish or a main meal. They can contain leafy greens or fruits. It’s amazing the options you have when you step out of the typical salad mold and try something new. A few weeks ago I was in the supermarket in my new neighborhood. Now, if you’ve ever moved and had to change supermarkets, you know the challenges that can be faced. Stores don’t always carry the same items and it is difficult to find your favorite brands. In this case, I was actually introduced to something new: Fresh Express salad kits. They were on sale, 2 for $5, so I decided to pick up the two that I thought sounded delicious and would make hubby happy too. I was excited to try the Asian chopped salad and the Southwest chopped salad.
The kits came with everything I would need to make a delicious salad – prewashed chopped greens, dressing, and toppings. My hubby and I both agreed that the Southwest was our favorite and we continue to purchase them. They are great as a snack to hold us over until dinner time, and can also be used as a meal. I add my favorite chili, beans, or chipotle chicken in the mix and we have a delicious meal that is fresh and inexpensive!
I’m happy to see that Fresh Express has also expanded their product line to include organic greens. My family is very big on organic, especially when it comes to the kids. The Organic Baby Spinach from Fresh Express is perfect to add to Eggs florentine, spanakopita, and meatballs. For side salads during dinner, I prefer the 50/50 mix which includes spinach and a spring mix. For Taco Night, we always have a bag of chopped coleslaw mix for toppings. The fresh, cool crunch is the perfect addition to our meal!

We just had their Bacon Caesar Kit for supper this evening. I like that I can just open the bag, toss it in a bowl and add the dressings and garnish and have a side dish for my family that they all enjoy!
We love Fresh Express salads mix – it makes eating healthier a lot easier. I admit to being a bit of a lazy cook, so there is no way I would cut up the lettuce, spinach, carrots, etc. They mixes make a great base for all kinds of things – as you pointed out, you can do just about any kind of salad you want: sweet, savory, sweet and savory.
We like to buy the spinach when it is on sale and freeze a bunch of it. My husband just grabs it straight out of the freezer for his smoothies.
