One of the most hectic holidays I have hosted myself is Christmas dinner without any help from my mom. It was my second year married and I was having my husband’s family over. Everything, including dessert, was homemade and was a 3 day process to get everything organized. I wanted dinner to be impressive, so I ordered a crown pork roast from the butcher. He asked me if I wanted him to stuff it for me and I scoffed at him – “No thanks, I can do it myself.” That morning I was wondering why I didn’t just enlist his help with the stuffing.
Mrs. Cubbison’s is not a name I was familiar with until a few weeks ago. No, she’s not my neighbor or a friend’s mom – but she might as well be! Mrs. Cubbison’s Kitchen was founded over 60 years ago by Sophie Cubbison. This would be perfect for a dinner made with the chicken I just got on sale for 65 cents/lb! I would create a cranberry stuufing side dish, use the seasoning for the chicken as well as the mustard to create a dipping sauce.

I would make chicken casserole with the stuffing on top. I would serve it wih a salad and use the croutons. Yum!
I would use the seasoning on grilled chicken, use the onions and dried fruit in a green salad, maybe use the mustard in the dressing for the salad and fix the stuffing as a side!

I would create a warm bubble bath, with soft light from the vanilla candles all around. A glass of red wine would sit beside the tub. My baby would be sleeping, all the while the smell of dinner would be wafting through the house. All these goodies would be whipped up for thanksgiving dinner, and I would be so relaxed because I had the time for that bath!
I WOULD MAKE A CAESAR SALAD

I’d like to make stuffed Cornish game hens. They are the perfect size for two people and no leftovers. Along with that I would serve extra dressing on the side, with a green bean casserole and a nice green salad topped with croutons.
