The first thing I think about in the morning when I wake up is “What’s for dinner.” I often ask my husband what he wants for dinner in the morning and he thinks I’m out of my mind (he’s probably right.) This morning I planned on making macaroni with meat sauce. I knew I had ground beef on hand – and pasta.. so this was an easy decision. When I checked the fridge, I had no parsley and no tomatoes. So I had to think of an alternative.
I had a bag of organic broccoli florets in the freezer and a bag of Kraft Four Cheeses grated cheese. This was easier than I thought! Here’s my recipe for tonight’s dinner:
1 pound organic (hormone free) 90% lean ground beef
1 medium onion chopped
1 pound of whole wheat rotini pasta
1 bag of Kraft Four Cheese blend
1 1/5-2 cups milk
salt
pepper
ground cinnamon
garlic powder
1-2 tbsp of olive oil in a pan and add onions. After they cooked a bit put the ground beef, break it up and let it cook.
In the meantime, boil a pot of water for the pasta.
When the chopped meat is almost done, sprinkle some salt, pepper, and a dash of cinnamon.
Put the cooked meat in a large oval pyrex and added the milk and the cheese to the same pot the chopped meat cooked in. Stir this mixture until it all comes together and it becomes smooth and creamy.
Place the cooked pasta (drain the water) into the cheese mix and stir it until all the pasta is covered. Transfer the pasta to the pyrex with chopped meat, add a bag of frozen broccoli, mix it all up and toss it into a 350 degree oven for about 20 minutes. When it is done, stir it some more and serve!
My little girl and hubby both LOVE this dish. And for myself, it is quick, easy, and delicious! (Oh yeah, and cheap too! For under $10 I can feed my family and still have enough for leftovers tomorrow – Plus it is mostly organic- conventional food might be a total of $2-4 cheaper.)
