There is nothing like a grilled corn on the cob for a summer barbecue. The slightly charred kernels wrapped in some butter is the perfect side dish to you summer grilling favorites. Growing up, my mom would make corn all year long, but nothing compared to barbecue corn we would have in the summer.
Corn is so versatile – you can have it as a side dish or include it in an appetizer. At every summer get together my husband and I host, I always make an easy to prepare Black Bean Mango Salsa with Corn. It’s super easy, very refreshing, and quite filling if you choose to have it as an afternoon snack. The ingredients are easy to find and you can either cut your own corn from the cob or purchase a frozen package of corn. During the summer months, I use frozen corn and leave it frozen so that it keeps the salsa cool. Don’t worry, the corn thaws out rather quick, so you won’t be chomping on iced corn.
Here’s what you need:
Black Bean Mango Corn Salsa
1 can black beans, rinsed
1 10 oz bag frozen corn
1-2 Mangos, diced
small red onion, finely chopped
2 tbsp fresh cilantro, chopped
2 limes
salt
Directions
In a large bowl add all the ingredients and squeeze out the juice of the limes. Gently toss. Serve cold and with crunchy tortilla chips.
Another one of my favorite recipes is a quick and easy to make meal that is loaded with protein and the whole family will love it! The following recipe is for Chicken Fiesta Bowls:
Chicken Fiesta Bowls
What you will need:
4 Chicken breasts
10 oz package of frozen corn
1 can of black beans, rinsed
small red onion, chopped
2 cups brown (or white) rice
2 tbsp fresh cilantro
4 oz plum tomatoes, sliced in half
2 avocados
juice of 2 limes
salt & pepper to taste
1 tbsp olive oil
1/4 tsp paprika
1/4 tsp garlic powder
1 tsp chili powder
1/2 tsp cumin
1/4 tsp oregano
crushed red pepper flakes (just a sprinkle)
Directions:
Cook rice according to package directions. Slice chicken breasts into 1/2 inch strips and marinate with olive oil, salt, pepper, paprika, garlic, chili powder, cumin, oregano and crushed red pepper flakes. Make sure chicken is coated thoroughly and grill on stove top grill or frying pan, coated with oil. Cook until done. While chicken is cooking, place black beans, corn, tomatoes, and cilantro in a bowl and mix with lime juice and a sprinkle of salt. Set aside.
In individual bowls, place cooked rice, chicken, and black bean & corn salsa. Cut Avocado slivers to garnish the side of the bowl, Enjoy!
